Description
About it: vigorous character, not overly sweet, lingering; reminiscent of fig jam, dried fruit, malt and dates.
Where to find it: in plain view at the table with some Fontina Valdostana AOC or flaunts its rebellious character when paired with a knife-beaten tartare of Piedmontese fassona.
